Carrot Stir Fry

  • Carrot250 – 350 grm
  • Coconut shred½ Cup
  • Onion½ cup Chopped
  • Green chillies2 sliced
  • Turmeric powder¼ tsp
  • Cummin seed powder½ tsp
  • Garlic 2 crushed
  • Coconut oil4 tbs
  • Salt to taste

Wash and skin the carrots. Cut into small squares or any size of your preference.

Heat the coconut oil in a pan. Add the mustard seed to splatter, toss in the cut carrots along with the rest of the ingredients except the coconut shred and saute till tender.

Add the coconut shred and stir and remove from fire.
