Pumkin Bread

  • Roasted pumpkin½ cup
  • Eggs8
  • Coconut oil½ cup
  • Raw sugar½ cup
  • Vanilla1 tsp
  • Cinnamon powder1 ½ tsp
  • Grated nut meg½ tsp
  • Salt½ tsp
  • Sifted coconut flour¾ cup
  • Baking powder1 tsp
  • walnuts or cashew nuts / peacan nuts chopped½ cup

Blend all the ingredients except the nuts. Combine coconut flour and baking powder. Mix well. Fold in the chopped nuts. Mix everything together without any lumps. Pour in a 9x5x3 inch pan and bake at 350 F ( 175 c ) for about 45 to 60 minutesdepending on the oven. Remove from pan and cool on a wire rack.
